This isn’t so much a ‘recipe’ as a suggestion for good eating – shaving and frying asparagus with some chilli and eggs isn’t exactly Cordon Bleu technique here, but it is something a little different. And lets be honest, it looks pretty great.
All you need is some good quality asparagus, I’m lucky enough to have Farmer Jacks on my doorstep so when asparagus season is happening, I’m ALL over it. Also some eggs, chilli flakes & oil and you’re done.
Recipe posts like this do sometimes make me wonder if I’m taking the concept of ‘simple’ eating a little too far but here’s to hoping that you guys get something out of it.
Recipe: Makes 1 portion
- handful of asparagus
- 1tsp chilli flakes
- chilli oil
- one egg
Start by slicing the asparagus lengthways, right down the middle. Add some chilli oil to a pan on a low/medium heat and fry the asparagus for around 5-8 minutes, or until they’re starting to get limp and looking a little charred.
At the same time boil an egg by adding cold water to a pan and bringing to the boil. Once the water has reached boiling point, add the egg and simmer for around 5 minutes if you like your yolk still slightly runny.
When they’re done, arrange on the plate and sprinkle with chilli flakes.
